FOOD SCIENCEPoultry Later in 2010, The Food Safety and Inspection Service (FSIS) Salmonella Initiative Program will further increase the pressure on poultry processors to achieve and maintain more efficient reduction of Salmonella, Campylobacter, and E. coli counts. Process mapping and validation of key components of the process will be essential elements in the processors' food safety programs. The FSIS is conducting a Nationwide Microbiological Baseline Data Collection Program for raw chicken parts (FSIS Notice 08-10).
