Since 2005, the FDA has required manufacturers to label their products with regards to eight specific allergens: Milk, Eggs, Fish, Shellfish, Peanuts, Wheat, Soybeans and Tree Nuts. Fermented products usually undergo several layers of fermentation and additions of cultures to reach the final stage that complicates targeted analysis. NGS removes these barriers by analyzing all DNA within a sample and separating out the individual plants and organisms based on genetic variation and diversity.
